The gas produced is carbon dioxide.

Yeasts fermentatewhich is a metabolic process that consumes glucose in the absence of oxygen.

This results in the production of ethanol and carbon dioxide which can be used in food processing. The ethanol is used to make alcoholic beverages andd carbon dioxide it's what makes bread rise  (those bubbles/holes in the bread were space ocupied by CO2)
